We’re suggesting our Rogue's Heavenly Blue Cheese Finishing Salt for the crouton beginner but this recipe can easily accommodate any one of our twelve flavor profiles. A perfect enhancer for soups, salads, bean dishes and pastas, or crumble them to make your own signature bread crumbs (see our Pasta and Toasted Breadcrumbs Recipe)…our crouton recipe is only as limited as your imagination. Makes 4 cups of croutons.


  • 4 cups 1-inch cubed crusty sourdough bread
  • 3 tablespoons olive oil
  • 2 tablespoons Italian parsley, chopped
  • 2 tablespoons thyme, chopped
  • 1 tablespoon chives, chopped
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon oregano, chopped
  • Freshly ground pepper, to taste
  • Salinity™ Salts Rogue's Heavenly Blue Cheese Finishing Salt (or your personal favorite finishing salt)


Preheat oven to 350˚F. Line a large baking sheet with parchment paper.

Place bread cubes in a large mixing bowl. Drizzle with olive oil and toss. Add chopped herbs and freshly ground pepper, mixing thoroughly. Spread on the baking sheet and bake on a middle rack for about 15-20 minutes until golden-brown.

Remove from oven. While croutons are still warm, sprinkle with Rogue's Heavenly Blue Cheese Finishing Salt.
